Founded by Corinne Cluis, a passionate scientist and creator, Distillerie Fove combines rigor and intuition. Coming from the research world, Corinne puts her expertise at the service of distillation to create spirits that combine chemical precision with sensory emotions.
Her approach stands out by both an artistic and scientific vision: understanding the material to better enhance it. Her acérums — white, amber, and aged 2 years — are distinguished by their precise aromas, balanced sweetness, and deeply Québécois identity.
It is this curiosity and mastery that allow Fove to push the boundaries of taste and offer acérums of remarkable finesse.

Our amber Acerum opens with a rich and indulgent nose, initially revealing pastry aromas of hazelnut and white chocolate, before unveiling, in the secondary nose, a hint of candied orange that adds brightness and depth. On the palate, the woody and vanilla notes blend elegantly and slowly unfold towards a long-lasting maple finish, warm and enveloping.
Aged six months in bourbon and rum barrels, this amber Acerum finds a subtle balance between roundness, complexity, and character, offering a refined expression of Quebec maple.

Cocktail suggestion: combine with lime and grapefruit juice to make a paloma, or with bitters and maple syrup for a revisited Old Fashioned.

Nose : Dominated by generous aromas of fresh pear, which provide a clear, crisp, and delicately scented impression.
Palate : Floral, long, and creamy, it unfolds with great softness, evoking the warm and melting character of a brown caramel. The enveloping texture and aromatic finesse give this white Acerum a supple and luminous presence that elegantly lingers on the finish.

Acerum aged 2 years
Aging
Aged for two years in former barrels of rum and whiskey, then finished with a torched maple syrup barrel finish, which gives it a warm depth and a decidedly gourmet signature.
Nose
Opens with delicate aromas of candied pear, honey, and almond, with second notes of maple taffy and baked apples.
Palate
Notes of s’mores and orange blossom unfold generously, supported by subtle hints of toasted oak and the soft, persistent presence of maple.
