The Acerum du Québec specifications officially define what an Acerum is and govern the conditions of production, development, and use of the designation. It serves as the common reference for the entire sector.

This document guarantees that any product bearing the name Acerum or Acerum du Québec meets precise and verifiable criteria, thereby ensuring the product's integrity, the credibility of the designation, and consumer trust.

Certification Requirements

Unlike other comparable products such as maple-flavored spirits, maple liqueurs, or creams, Acerum du Québec stands out due to the raw material used, its production process, and, where applicable, its aging. Acerum du Québec is a maple eau-de-vie obtained exclusively by distilling alcohol produced from the fermentation of maple sap or derived products, including concentrated maple sap, concentrate, and maple syrup exclusively from Québec.

All types of stills are permitted, and at the end of distillation, the distillate must have an alcohol by volume (ABV) not exceeding 90% at 20 °C to retain the characteristic aromas of fermented maple sap. Except for water and, in some cases, the filtrate, no substance may be added to the distillate after distillation. To obtain a particular aromatic profile, blends of Acerum du Québec are allowed but must comply with the specific rules for each type of Acerum (white, amber, aged). In all cases, Acerum du Québec must contain a maximum of 15 grams of sugar per litre and must have a minimum alcohol by volume of 35% when marketed.
