Acerum of Quebec (PGI) is THE spirit born from maple — a 100% Quebec creation.
Made exclusively from the fermentation and distillation of maple sap from Quebec, Acerum reveals the full aromatic richness hidden in our boreal forest. Through the expertise of distillers, the sugar from maple transforms into pure alcohol, releasing delicate, floral, and woody aromas.
Officially recognized since April 2025 as the first protected geographical indication (PGI) in Canada in the spirits sector, Acerum of Quebec is a product of Quebec designation. The terms Acerum and Acerum of Quebec are protected: they can only be used in Quebec and solely to designate certified spirits compliant with the PGI.

Three main profiles stand out:
- White Acerum: unaged, with a pure and crystalline taste.
- Amber Acerum: aged, offering woody and rounded notes.
- Aged Acerum with age statement: the most complex expression, marked by time and the barrel.

Dilution
Before bottling, Acerum is diluted with pure water to adjust its alcohol concentration while preserving its aromatic profile.

Traffic jam
Each bottle is filled, sealed, and identified manually or mechanically depending on the facilities of each member distillery.

Labeling
Labeling clearly identifies the product and its certified origin. Each bottle of Acerum from Quebec reflects a unique distillery and terroir.

IGP Acerum du Québec Certification
The Acerum certified IGP (Protected Geographical Indication) guarantees a product that meets the quality, origin, and production method requirements established by the Union of Maple Spirit Distillers.

Public sale launch.
Once certified and bottled, Acerum is distributed to the general public in accordance with the laws in force in Quebec. The marketing is mainly done through the SAQ, which ensures the product's distribution throughout the territory. Some member distilleries can also sell directly on site, depending on government authorizations. This step marks the meeting between the artisans' know-how and spirit enthusiasts from here and elsewhere.
