Made exclusively from the fermentation and distillation of maple sap sourced from Quebec, Acerum reveals the full aromatic richness hidden in our boreal forest. Through the expertise of the distillers, maple sugar transforms into pure alcohol, releasing delicate, floral, and woody aromas.

Officially recognized since April 2025 as the first protected geographical indication (PGI) in Canada in the spirits sector, Acerum from Quebec is a product of Quebec designation. The terms Acerum and Acerum from Quebec are protected: they can only be used in Quebec and solely to designate certified spirits conforming to the PGI.
Three types of Acerum
Each Acerum expresses the personality of its creator and the wood from which it was born. Three categories are recognized:
White Acerum
Unaged, it is translucent and lively. On the nose, it evokes honey, flowers, and sometimes fresh fruit. On the palate, it offers notes of apple and pear, with a subtle touch of bark and pepper. Its delicate finish hints at the purity of the maple.Amber Acerum
Aged less than a year in a barrel, it develops a golden hue and aromas of caramel, vanilla, oak, and ripe fruit. Its flavors sometimes recall cooked pear, homeless pudding, or maple sugar cream, while retaining the freshness of the maple.Aged Acerum
Aged at least a year, it gains roundness and depth. The barrels — new or used — influence its aromas: candied fruit, spices, toasted wood, or dessert notes. The longer the aging, the more the texture rounds out and the finish extends.
A maple eau-de-vie.
Acerum is an eau-de-vie, that is, a spirit with an alcohol content generally ranging between 38% and 50%, depending on the style and distillery. It differs from products simply flavored with maple by its artisanal process: maple is not added, it is the very origin. Consequently, it is not sweetened. The distillation process rather brings out flavors already present in the maple sap but masked by the sugar. Each distillery imprints its signature, creating a diversity of expressions reflecting the desire for exploration and the creativity of a new generation of artisans.
