Located in a former munitions factory in the heart of Quebec City, Distillerie Arsenal & Co. draws its inspiration from travel and adventure. Founded by four globetrotters, the distillery crafts bold spirits that blend industrial heritage, international horizons, and refined artisanal expertise. It is also responsible for producing and marketing the product line of Distillerie du St-Laurent. Each bottle reflects a quest for new horizons while showcasing local raw materials and distillation techniques — a testament to an adventurous spirit that resonates within the maple spirits industry.
The distillery’s philosophy revolves around three core pillars: the quality of ingredients sourced from Quebec’s terroir, innovation in aromatic profiles, and an immersive visitor experience. The site itself — a historic building transformed — serves as a setting where industrial history meets modernity, craftsmanship, and cocktail culture.
St.Laurent Acerum 3 years
The St. Laurent Acerum is a noble eau-de-vie that highlights the delicate aromas of distilled maple sap. Fermented only from Quebec maple syrup, water, and yeast, the wort is distilled twice in a copper still, without any added sweetener or flavor. The eau-de-vie is then aged for over a year in new and used oak barrels. It takes more than 25 liters of sap to obtain a single bottle.
The profile is fruity and airy: aromas of apple and candied pear, notes of coconut bark, toffee and butterscotch, lightly tannic woody touches, and a long creamy finish evoking maple butter.
